Without haste, without tricks, without compromises. Since we started, years ago, the journey has been long and the obstacles numerous, but the result of so much effort is what today is called Metodo Naturale Guido Castagna. A meticulous production method, from the purchase of cocoa beans from certified cooperatives, to the packaging of the products in Made in Italy packs. A system that has awarded our products with important recognitions worldwide, including several “International Chocolate Awards®” golds. Our challenge is to innovate, to create ever better products capable of giving a small moment of happiness to those who will have the pleasure of tasting them.
Natural Method. Simple rules.
The Guido Castagna Natural Method is everything we think and do to create an ideal chocolate from the choice of beans to the final packaging. A sustainable chocolate, which follows the slow rhythm of nature and respects people, to release its aromas without additional processing. What was a dream has become a Method.
Cocoa selections
We purchase the best cocoa in the world by personally visiting the producing cooperatives, ensuring that they respect people's work and do not exploit child labor.
Roasting
We slowly roast the cocoa beans at low temperatures, so as not to alter the natural characteristics of the aromas. A delicate and very important process that will determine the final quality of the chocolate in all its nuances. This is why we also use the word “roaster”.
The wait.
The "Guido Castagna Natural Method" develops over a period of 12 months from the arrival of the cocoa beans in our laboratory, allowing time to enhance the natural aromas. During this period we do not treat the chocolate with salts, but wait 6 months for it to mature, so that the natural process determines the right level of acidity.
The result.
Each of our products is handcrafted following the course of time. Each creation is unique and unrepeatable. There is no quick way to do what we do. Each single phase is checked with the utmost attention, from start to finish, seeking perfection in every detail, from the choice of cocoa beans to the final packaging in made in Italy packaging.
